Recipe: Apple Tatin

No cake is more representative of French gastronomy than the apple Tatin, which has become one of the most famous recipes in history, and today we tell you how to make it!

Ingredients (for 6 people):

For the dough:

  • - 250 g pastry flour
  • - 160 g butter
  • - 50 ml milk
  • - 1 egg yolk
  • - 15 g sugar
  • - 5 g salt

For the filling

  • - 1 kg apples
  • - 200 g sugar
  • - 75 g butter

Time: 2 hours

Difficulty: Easy

Preparation:

  1. 1. To prepare the dough, place the flour, sugar, salt and well-chilled diced butter on a counter top. Knead the mixture until the desired texture is achieved.
  2. 2. Make a hole in the centre and add the milk and egg yolk. Continue mixing the dough until it has a smooth texture.
  3. 3. The dough is ready once the ingredients have blended: wrap it in cling film and leave it to rest in the fridge for an hour.
  4. 4. For the filling, peel and cut the apples into quarters.
  5. 5. In a baking pan, make a light caramel with the sugar and butter until it turns brown.
  6. 6. Add the apple and cook for twenty minutes. Leave to cool for half an hour.
  7. 7. Spread the dough over the apples in a 4 mm layer, sealing with the edges.
  8. 8. Bake at 180 degrees in a preheated oven with upper and lower heat for 25 minutes until the pastry turns golden brown.
  9. 9. Once it has cooled, turn it over onto a tray.
